Strawberry Mint Lemonade

June is one of my favorite months because it begins to get consistently warm outside. It is also when strawberries are in season. Strawberries taste the best when they are in season! This is the season when I get to start seeing some of the fruits of my labor in my garden. Mint is one of my favorite herbs to grow because it is easy, and usually produces a lot for me to be able to use in a variety of recipes!


As it is now officially the outdoor season! Whether you're grilling or picnicking make this delicious beverage for your next outing!



Serving Size: 52 Fl Oz (8 servings)


Ingredients:

2 Cups of Strawberry Juice (Approx 25 Strawberries)

2 Cups of Lemon Juice (Approx 15 Lemons)

1/2 Cup of Mint Leaves (Approx 15 Mint Leaves)

1 Cup of Water

1 & 1/2 Cups of Simple Syrup


Simple Syrup:

1 Cup Turbinado Sugar or Honey

1 Cup of Water


Blend the strawberries until it resembles a very loose consistency. Strain the strawberry juice and set it to the side. Next using a hand-held juicer, juice all of the lemons. Strain the lemon juice so that there are no seeds and set to the side.


Afterward, make the simple syrup. Add 1/2 of the mint leaves to a pot along with sugar or honey and the water. On medium heat, allow for the sugar to completely dissolve. Once dissolved remove for the heat.


Next combine the strawberry juice, lemon juice, water, and left-over mint leaves.


Gradually add in the simple syrup until it is at your desired sweetness.


Chill for at least 1 hour and then serve over ice!
